A warm, budget‑friendly dinner built around this week’s cheapest protein (pork shoulder) and low-priced produce (apples, carrots, potatoes). Feeds 4 comfortably.

Ingredients:

  • 1 lb pork shoulder, cut into small cubes

  • 1 large apple, diced

  • 2 carrots, sliced

  • 1 potato, diced

  • 1 cup uncooked rice

  • 2 cups broth (or water + bouillon)

  • 1 small onion (optional)

  • Salt, pepper, garlic powder, thyme (or whatever you have)

Steps:

  1. Sear pork in a pot with a bit of oil until browned.

  2. Add onions (if using), carrots, potatoes, and apples. SautĆ© 3–5 minutes.

  3. Pour in rice, broth, and seasonings. Stir and bring to a boil.

  4. Reduce to low, cover, and simmer 18–20 minutes until rice is tender.

  5. Rest covered for 5 minutes, fluff, and serve.
